I am going to get real with you for a moment. Sometimes we just need shortcuts in life and today I decided to take one and it turned out better than I expected. I had a box of Simple Mills Almond Flour Artisan Bread, which I found at a health food store like Whole Foods or Natural Grocers. I am not a huge fan of almond bread, but I saw on the back that if you add some eggs, water, and oil you can make more than just a loaf but a flatbread or rolls. That’s it!
I was just watching the Pioneer Woman the other day where she made decorative focaccia bread with these pretty veggies on top and yummy seasonings and oil. I thought that I could make something like that with this boxed bread mix, made into a flatbread with yumminess on top. I searched my refrigerator and didn’t find so many things to put on the bread, but I did have some spring onions and olives, and I always have dried seasonings on hand. So here is my shortcut recipe for Fancy Almond Flatbread.
Fancy Almond Flatbread
Sometimes we need shortcuts in life to make it a little easiery. Here is a shortcut for a savory Fancy Almond Flatbread that the family is sure to love.
Ingredients
- 1 box Simple Mills Almond Flour Artisan Bread
- 2 eggs
- 4 Tbs coconut oil, melted
- 2 Tbs water
- 1-2 spring onion green tops only
- 4-6 olives I use red pepper stuffed olives
- 1/2 tsp basil
- 1/2 tsp rosemary
- 1/2 tsp thyme
- 1 tsp flaked sea salt
- Olive oil for topping
Instructions
- Preheat oven to 350 degrees. Rub oil on a sheet pan and set aside.
- Mix bread mix according to package instructions for FLATBREAD.
- Wet your fingertips with water. Place dough on the sheet pan and gently form a circle about 1/2 inch thick.
- Decorate with your veggies, then sprinkle on the dried herbs and salt.
- Brush olive oil over the top of the bread and veggies.
- Bake for 20 minutes and broil it for the last 90 seconds to get a nice color on the bread and veggies.
- Let cool, slice it up, and eat!
Notes
You can add tomatoes, banana peppers, fresh herbs, red onions, peppers. Anything to your heart's desire.
