On Sunday mornings, I have the opportunity to meet up with my running partner and hammer out the pavement. After my run, I am usually really hungry, one of my favorite foods to make is tofu scramble. It is quick and easy to make. The best part of it all is that you can adapt this recipe to whatever fits your taste. Tofu takes on the taste of what you cook or soak it in, so have some fun playing with the recipe to make it your own. This particular recipe I have used vegan poultry seasonings to accompany my meatless chick’n strips. The tofu scramble itself it gluten free, however the chick’n strips, I put on the side, are not.

Tofu Scramble
ofu takes on the taste of what you cook or soak it in, so have some fun playing with the recipe to make it your own. This particular recipe I have used vegan poultry seasonings to accompany my meatless chick'n strips. The tofu scramble itself it gluten free, however the chick'n strips, I put on the side, are not.

Ingredients
- 1 pkg extra firm tofu
- 1 cube vegan poultry seasoning
- 1/4 tsp tumeric
- 1/4-1/2 tsp salt
- 1/4 tsp chipotle chili powder
- 1 tsp oregano leaves dried
- 1 Tbs Earth Balance butter
- 2 Tbs salsa Fresh
Instructions
- In large pan, put Earth Balance butter and let it melt.
- Drain tofu and crumble into pan.
- Let sit for 1-2 minutes on medium high heat to burn off some of the water in the tofu.
- Incorporate seasonings into tofu.
- Top tofu scramble with 2 tablespoons of fresh salsa.
Notes
As an additional side to your tofu scramble, add 5 strips of Gardein Meatless Chick'n strips and a sliced banana. Great recovery meal after a morning run.
