Method
- In large pan, put Earth Balance butter and let it melt.
- Drain tofu and crumble into pan.
- Let sit for 1-2 minutes on medium high heat to burn off some of the water in the tofu.
- Incorporate seasonings into tofu.
- Top tofu scramble with 2 tablespoons of fresh salsa.
Notes
As an additional side to your tofu scramble, add 5 strips of Gardein Meatless Chick'n strips and a sliced banana. Great recovery meal after a morning run.
