When I was diagnosed with Hashimoto’s, I was told that coffee would no longer be able to be a part of my life. That was until I found swiss water process coffee. I now can have all the benefits of coffee without the caffeine. But what exactly is the Swiss Water Process? The Swiss Water method is quite fascinating really. It all starts with the Green Coffee Extract. This is created by soaking the beans in pure water which releases the soluble solids from the bean. Then the coffee bean is prepared to have the caffeine extracted by rehydrating the green coffee. Next, the caffeine is removed by circulating the GCE around the green coffee for 8-10 hours and absorbed into a carbon filter where then it is taken to be burned and reused. This process removes 99.9% of the caffeine.

I find it really amazing that they have figured a way of doing this without compromising the taste of the coffee and without chemicals. This makes it fine for me to consume with Hashimoto’s. Now, this is what works for me. If you struggle with an Autoimmune disease or have a caffeine sensitivity, be sure to check with your doctor or dietitian to see if this is something you can do. We all have different bodies and react in different ways, so it is best to always proceed with caution when trying something new.
