I think I would be missing out on a little of life if I didn’t learn how to make smoothies. I am a huge fan of the ice cold juicy goodness that fills my heart and stomach at the same time. There are different kinds of smoothies out there. Some of my favorites are blueberry/banana, chocolate/avocado, coconut/pineapple, and mixed berries/spinach. Besides the taste and the texture of this amazing drink, I love that my children like it too (including my husband on that one.) I can mix all kinds of fiber in there and they don’t have a clue. The one I recently made was a mint green smoothie. It is inspired by this amazing website, simplegreensmoothies.com.  Although similar to their recipe, I wanted to be sure to take advantage of the peppermint essential oil (those that you can ingest.) It not only added great taste, but it added the benefits of the oil itself. I fell in love with the taste. It was creamy and minty. I am glad to share this one with you. Enjoy.

Mint Green Smoothie

Green smoothie packed with minty flavor with a smooth texture.

Ingredients
  

Mint Green Smoothie

  • 1 cup coconut milk full fat
  • 2 bananas ripe
  • 2 cups spinach fresh
  • 5 prunes
  • 1 tsp. pure vanilla extract
  • 1 drop peppermint essential oil

Coconut Whipped Cream

  • 1 can coconut milk solid
  • 1 Tbs. organic maple syrup
  • 1 tsp. pure vanilla extract

Instructions
 

Mint Green Smoothie

  • In food processor or blender place coconut milk liquid, bananas, spinach, prunes, vanilla and one drop of essential oil.
  • Blend until all items are smooth and creamy.
  • Pour into glasses and top off with coconut whipped cream and vegan chocolate.

Coconut Whipped Cream

  • Take the coconut milk solid from the top of the can that has been chilled in the refrigerator overnight and place it in a chilled mixing bowl.
  • With a high speed hand mixer, mix the coconut solid until it is thick and creamy.
  • Add 1 Tbs. organic maple syrup and vanilla and mix until ingredients are well incorporated.
  • Place a dollop of coconut whipped cream on top of smoothie and top with some vegan chocolate.
  • Serve
