So, there are times that I don’t always make it to the grocery store when I need to. In these cases, I try to use my creative side and come up with a recipe that my family will love based on the little ingredients I have left. One easy and budget friendly meal is Poor Man’s Stew. It is so easy to make and it only takes about 15-20 minutes. It is kid approved and the bowls are clean to prove it.
Poor Man’s Stew has a little bite to it. The burger I used, Beyond Beef, had spices in it already, if you don’t like bite to your burger you can choose to use a different burger. I use this particular one because it is vegan and gluten free. If you would like to speed your meal up, you can microwave your potatoes. I don’t recommend it for the recipe as microwaving zaps the nutrients and takes out flavor. If you have the patience, skin and cut your potatoes and let them cook in the stew to give it a nice starchy base.
If you don’t have much time during the evening to make this stew, you can put it in a small crock-pot and let it cook on low for 5-6 hours. If you have a larger crock-pot, double the recipe. It will freeze well and be great for a cold or rainy day.

Poor Man's Stew
Ingredients
- 3 small potatoes skinned
- 2 medium carrots chopped
- 1 pkg. frozen peas
- 1 pkg. vegan burger I used Beefy Crumbles by Beyond Beef
- 2 cups vegetable broth
- 1/2 can tomato sauce (optional)
Instructions
- Place all ingredients into cooking pot with lid. Let cook for 20 minutes or until vegetables are soft.
- Serve immediately. Refrigerate or freeze any leftovers for another cold and rainy day.
