Protein Fried Rice

The recipe turned out really creamy and tasty. I did have to add more water since the protein powder was added. I also chose to add the salt at the very end. I try to cook with as little salt as possible, so if you are one that prefers to have a more salty dish, please add to your liking. This is a great dish to serve on the side or just to dish out and eat by itself. You can also top it with some vegan sour cream to add to the creaminess. I also choose to buy local organic veggies and spices, so all of my ingredients will be NON-GMO and Organic even if they are not listed as such.

Ingredients
  

  • 2 Large carrots (Not the baby carrots)
  • 5 Sweet peppers
  • 1 tsp Fresh tumeric Peeled and Grated
  • 1/2 tsp paprika
  • 2 tsp cumin
  • 5-6 cups Cooked brown rice
  • 1/2 cup baby spinach Chopped
  • 4 Tbs. Pea Protein Isolate Powerootz brand (26g of Protein)
  • 2 cups water Add when needed to thin Fried Rice
  • 2 Tbs coconut oil

Instructions
 

  • Place 2 Tbs. of coconut oil in large-extra large pan. (Make sure it is a big enough pan to hold 6 cups of cooked rice.)
  • Dice all of your veggies except spinach and place in large-extra large pan. Cook for 5-8 minutes or until vegetables are softened.
  • Add seasonings, brown rice, protein, and water. Cook the water down until you get a creamy consistency.
  • Add spinach at the last minute, stirring until wilted. Serve hot and enjoy.
